The grapes are de-stemmed, gently crushed, following fermentation at (25 ̊̊C). After the alcoholic fermentation, the malolatic “fermentation” occurs, fundamental for the softness of the wines. To confer greater complexity, the wine ages in half oak barrels for approximately six months. The bottles should lay flat, to enable the wine to be permanently in contact with the cork. This is the sort of wine that you can drink immediately.
